Personal Wines can be BIO and DOC (guarantee of origin) certified, but the main feature that identify them is the fact that are based on the experiences, feelings and perceptions of the vigneron (wine producer). He decides when a wine is ready to be drunk, that is when it reflects his personal concept of wine. He does not follow the market’ requirements, he creates a market.
Not producing wines on the basis of what clients want, he creates new tastes and smells based on the emotions he wants the wine to express and he would like people to feel while tasting them.

During the wine tasting you will savor wines that have been created from a well defined and strong idea of the vigneron. Tommaso works with his own wine cellar and he is a wine consultant for the second wine cellar we will visit.

---- FIRST WINE CELLAR -----
Old vineyards & hystorical wine cellar of Vittorio Emanuele II , the King
“First generation” wine maker, Tommaso has developed a proper production method to raise the vineyards and create a taste of wine that represents him. A daily and attentive care of all the working phases from vineyard planting to the bottle's labeling, using the most possible natural and handmade techniques, no compost and the ground natural cover is left untuched.
Among his vineyards the star is the one he called “Claudia” [Shiffer]; an over 70 years old vineyard, his hystorical love.
You will taste not only from bottles but also directly from the tank and barrels to better understand the various steps of the aging process. In some period of the year the bravest people can have a deeper experience personally taking part on some step of the wine-making process (the barrel's filling or raking or others)... not a simple wine tasting, but the emotion to feel like a vigneron for a day!

Amphorea & sheep in the vineyards
Cascina Voglietti with its stunning view on the fascinating hills of the Monferrato area will welcome you for a visit to its cellar. Beautiful sheep left grazing among the vineyard lines are a peculiarity of this place. The sheep' grazing is used to cut the grass and fertilize the ground in a very natural way.
Another peculiarity of this cellar is the use of handmade amphorae to age some of the wines produced here. Amphorae are kept above the ground and can keep 200 liters of wine each. This technique (that was originated 8000 years ago in Georgia) allows the wine to receive more oxigen and gives to it a very specific and unusual taste and smell.
